This makes a great, healthy treat you can munch on without sending your blood sugar through the roof!
Blood Sugar Friendly Spinach Artichoke Dip
Servings: 12 people
Ingredients
- 1 cup Chopped frozen spinach, thawed
- 1 1/2 cup Frozen artichoke hearts, chopped and thawed
- 5 wedge Laughing Cow ® Light garlic and herb cheese
- 1/2 lemon lemon, juiced
- 2 tbsp Light mayonnaise
- 3 tbsp Grated Parmesan cheese
- 1/4 tsp Red pepper flakes (optional)
Instructions
- In a small pot, boil spinach and artichokes in 1 cup water until tender.
- Discard liquid, drain well and set artichokes and spinach aside in a bowl.
- In the same pot, melt Laughing Cow cheese wedges over low heat
- Add remaining ingredients; mix well and continue to cook for additional 1-2 Minutes.
- Add drained spinach and artichokes to the pot and stir.
- Cook an additional 2 minutes
- Serve warm with your choice of vegetables or whole-wheat crackers.
